The altitude ranges from 1400 to 1750 meters above sea level, providing the ideal conditions for growing exceptional coffee. The clay soil, combined with the unique microclimate of the area, contributes to the distinct characteristics of this remarkable coffee. The cherries of Finca Las Rosas are precisely selected at their peak ripeness, determined by their sugar content, which ranges from 18 to 24 degrees. To enhance the flavours and aromas, the cherries undergo a natural processing method. They are subjected to anaerobic fermentation for 48 to 72hours before being carefully washed with pure spring water. The cherries are then dried on African beds and patios for a duration of 15 to 25 days, allowing them to reach their optimal moisture level.
A Geisha plant produces half the beans of other varietals, it is a very sought after coffee and although difficult to grow; it is a spectacular coffee to consume. Finca Las Rosas, a renowned farm in Guatemala, is a testament to the dedication and rich history of the Villatoro family. With roots dating back over a century, the legacy of coffee cultivation began with Don Valentín Villatoro Ventura, and it has been nurtured and expanded upon ever since. Today, Don Rolando, a fourth generation of the family, proudly oversees this treasured estate. Beyond producing exceptioal coffee, this estate also prioritises social initiatives. They undertake various projects aimed at improving the lives of their community.
What is so special about Singles? Single-origin coffees are small-batch roasts from a specific growing area within a country. Have a look at your coffee beans to see where they’ve come from. Even more specific is a microlot coffee, which comes from only one growing area or plot on a single farm. Singles and microlots allow the consumer to understand and appreciate a specific coffee for its own unique flavour profile and distinct characteristics. They also help to establish traceability from farm to cup.
