This Columbian microlot is 100% Castillo varietal; a botanical cultivar which is more resistant to leaf rust and more productive than Caturra. Coffee cherries at Diofanor’s farm are picked following a strict ripeness criteria, ensuring the highest quality green beans.
This coffee has been processed using anaerobic fermentation. This means that the coffee cherries are placed into hermetically sealed fermentation tanks for 12 hours, prior to being de-pulped and dried with the mucilage still intact. The resulting flavours are complex, syrupy and super sweet.
