In the Cup: Expect an intensely sweet cup with notes of cranberry, almond and creamy shortbread.
For five generations the Valdes family have produced exceptional coffee. The coffee cherries are hand-picked to ensure premium ripeness, before being fully washed and sun-dried on patios. Santa Isabel train and employ 40 permanent workers year-round, and the farm produces just short of 70kg of green coffee beans annually.
A picker at Santa Isabel harvests up to 160 pounds of coffee cherries each day. The Santa Isabel farm is known as one of the most stable and reliable workforces in the region. In addition to paying their workers’ fairly, the coffee growing processes at Santa Isabel are focused on environmental responsibility. They maintain a reserve of natural forest, and 100 hectares of reforestation area planted with pine and cypress. The farm goes so far as to use the pulped coffee husks as organic fertiliser.
Colombian Totoro coffee is grown by small hold farmers in the Tierradentro region, which is on the western side of Cauca. Eighty percent of inhabitants come from the indigenous tribe called “Paeces”. Volcanic soils, along with an annual rainfall of up to 2200mm, create ideal conditions for coffee growing. This full-bodied coffee perfectly compliments the intense sweetness of the Santa Isabel.
