Grown in the heart of the Central Valley in Alajuela by Oscar and Francisca Chacón. The husband and wife duo are dedicated to producing the highest quality micro-lot coffee beans in Costa Rica. This dedication shines through the coffee, with each batch offering a superb flavour experience.
In recent years honey processing has become a popular method.
There are several different honey processing methods, you can visibly see these different processes in the colour of the green beans (yellow, black or red).
Oscar and Francisca have experimented with the processes to accomplish full, flavoursome and mouth-watering taste notes. The couple add slight variations to the method, analysing which process is the most effective. They specialise in producing red, black and yellow honey processed coffees as well as natural.
Yellow honey processed beans are the mildest in flavour. Most closely resembling washed coffee with a popping fruity flavour.
Red honey process is bolder and bursting with fruit and a noticeably more syrupy body.
Black honey process is much more wine-y and jammy characteristics with a creamy body.
Oscar and Francisca have built quite the reputation for themselves, known for producing some of the best honey processed coffees in the world.
A serious earthquake threatened the farm in 2008. This affected their access to water. In an attempt to save the harvest, Oscar and Francisca experimented with producing honey and natural coffees. To their delight, the honey and natural processed coffees became some of the best the farm has produced. Now, they specialise in offering honey and natural processed coffees.
The cherries are picked when they’re bright, red, and perfectly ripe. Depulped straight away, usually between 8-12 hours after picking. Next is the drying phase. The drying phase is different depending on the bean. For the yellow honey processed beans, they’re laid out to bake in the sun. Coffee is left to dry until they reach their desired moisture content (approx. 11%).
