Colombia Santa Monica Honey Process is grown by Jairo Arcila at Finca Santa Monica. Jairo ensures only the ripest cherries are handpicked, before honey processing takes place.
Honey processing is different to the natural process, because the pulp of the coffee cherry is removed. The sticky sweet mucilage is left intact and dried on the seed for 18 hours. The mucilage on the coffee cherry is sometimes called “honey”, because of its texture and sweetness.
