Our elves in the roastery have been very busy working on our festive release Christmas Blend.
We’ve been working on the perfect blend for Christmas 2023 and guess what… we’ve found it! Theblend ratio is a super secret but read on below for chosen varietals. We have two specialty high grade coffee’s from one of favourite growers at Cofinet, Jairo Arcila.
Colombia Jairo Arcila – Natural Cinnamon VARIETAL Castillo | LOCATION Quindio, Villarazo | 1400 – 1450 MASL
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are the co- founders of Cofinet. Jairo’s first job was at Colombia’s second- largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019. Now he does the fun and experimental coffee that we LOVE to work with.
Colombia Jairo Arcila Santa Monica – Natural EF2 VARIETAL Microlot is 100% Java | LOCATION Quindio, Santa Monica | 1400 – 1450 MASL
Jairo bought his first coffee farm, Finca La Esmeralda, in 1987 and this is where he planted his first Caturra lot. He was fortunate enough to earn money by producing coffee on his farm in addition to working full time. Using his savings, Jairo slowly managed to purchase five additional farms.
Indonesia Blue Bianca – Wet Hulled VARIETAL Onang Ganjang (local Bourbon variety) | LOCATION Sumatra | 1400 MASL
Brazil Fazenda Santa Isabel – Natural 120hr Fermentation VARIETAL Arara | LOCATION South Minas Gerais | 1180 MASL
The yellow fruiting Arara variety, a cross between Yellow Catuai and Obatã has shone out for its excellent cup quality potential. To elicit the complex, sweet flavours of this particular lot, the team chose to ferment whole cherries anaerobically for 120 hours in sealed drums fitted with one-way valves. This process has enhanced its natural sweetness. Very aromatic!
