The grower Thiago Souza is the third generation in his family to farm coffee. Souza’s grandfather began operations and to his delight, his farm produced superb specialty coffee beans.
“Our family has always produced speciality coffees but never knew the real potential quality they have in hands. We achieve a lot in quality and processing, but we are always looking for process improvement and high-quality production.” – Thiago Souza.
The farm has only continued to grow in popularity. All three generations have dedicated their careers to increasing their knowledge of farming, producing more delicious coffee beans, and embracing the wonderful connections the industry fosters. Once you take a sip of your brew you’ll discover the wonderous flavour that everyone’s been talking about.

The area is renowned for its Mantiqueira Mountains, which rise from the northwestern bank of the Paraíba do Sul River. There’s fertile soils, plenty of sunlight, and high elevations. Mantiqueira de Minas region is blessed to be naturally gifted with the perfect conditions for farming coffee. The proof is the pudding – year after year, Souza’s farm is prized with prestigious awards such as the Cup of Excellence.
These coffee beans have been processed through a controlled fermentation, which has also been dubbed a “slow natural“. This is a relatively new process for Brazil who have previously been more inclined to wet processing. In the last 20 years, this has changed. Souza has experimented with natural processes and has discovered the beauty in a controlled fermentation.

We recommend serving these beans as espresso in your long black or flat white – produces an exceptional cup! We have tried these Brazil coffee beans in a v60 and they have proven to still offer a great cup. Because it’s a light espresso roast you can get away with brewing them up in your filter device, let us know what you think!
